That pack of Garam Masala and its history.
For any restaurateur, especially those running a North Indian establishment, incorporating Just Half Spoon's Garam Masala and Kitchen King into your kitchen is essential. These spices proved their worth in our previous venture, "Satkriti Saatvik", where we proudly received only one complaint of stomach upset in five years of operation. This record stands as a testament to our commitment to quality and hygiene, something Ramya and I hold as a badge of honor.
Commercially available spices often fail to meet high standards. They are typically made with broken chili or broken coriander to reduce costs, resulting in compromised flavor and aroma. At our own restaurants, we recognized this gap and dedicated ourselves to creating superior spice blends. Our garam masala and sambar masala took over eight years of relentless refinement. We consulted with renowned caterers, continually tweaking our recipes until we achieved perfection. The garam masala you can buy today is the result of this dedication to quality and authenticity, evident in every batch of spices we produce.
As a restaurateur, I’ve always strived for culinary excellence, Traditional cooking methods often rely heavily on the chef's skill and consistency, leading to variations in taste and quality. By adopting combi ovens, we achieved hands-free cooking with precise control over temperature and humidity, ensuring that every dish is cooked to perfection every time. This technology has allowed us to standardize our recipes and maintain a consistent taste, free from the fluctuations that can occur with manual cooking, main thing is we our cooking temperature was between +140°C to 160°C , which allows us to make use of Millard's Reaction.
One of the critical elements contributing to the unparalleled taste in our restaurant is the use of cold-ground spices at -196°C, particularly garam masala. When cold-ground, this versatile spice enhances flavor and aroma threefold. The meticulous process of cold grinding preserves the essential oils, ensuring that every dish bursts with authentic taste and rich fragrance. Garam masala, a blend of various spices, plays a pivotal role in Indian cuisine, adding depth and complexity to dishes. By cold grinding, we retain the volatile oils that provide the distinctive aroma and taste, elevating our dishes above those using commercially available spices.
